
BAYURVIDA® kitchen with Sascha Horst

During his Ayurveda training in 2013, Sascha discovered his fascination for this exotic culinary art and its diversity. The goal of Ayurveda is to restore harmony to body, mind, and spirit. The basis for this are the three different doshas: Vata, Pitta, and Kapha. The dosha is a basic mental and physical pattern, of which each of us carries components within us. Shaped by these experiences and respecting our Bavarian roots, you will experience BAYURVIDA® cuisine only with us.
Despite the delicious Ayurvedic recipes, Sascha needed a few more local ingredients for the kitchen and the Staudacherhof restaurant—after all, we are in Bavaria. And because things happen as they should, he learned for the first time during this professional training. Andreas Hollard Andreas Hollard is not only an Ayurveda specialist, but has also developed a complete Bavarian Vedic cuisine. He draws on the principles of Ayurvedic health teachings and combines them with traditional, home-style Bavarian cuisine.
In the BAYURVIDA® cooking method, only Tridosha is cooked, which means that all 6 tastes are included according to the following percentage: sweet: 60%, sour: 15%, salty: 15%, spicy: 5%, bitter: 2,5%, tart: 2,5%.
To create this optimal mix, it's important to know how the body processes each food. Only what the body can excrete is allowed. A challenge that Sascha, as he himself says, is very happy to take on.
Incidentally, the BAYURVIDA® dishes at the Hotel Staudacherhof are not vegan – meat and fish are commonplace in its recipes; the mix has to be just right. And for those who prefer not to eat meat or fish, a fine vegetarian selection awaits.
Where will this lead?
Mr. Staudacher was quickly impressed by the BAYURVIDA® cuisine, and no sooner did he have an idea, such as BAYURVIDA® pralines or bratwurst, than he had a tasting plate in front of him the next day. Sascha gets ideas not only from his boss, but also from everyday life: "[...] when I'm eating bread dumplings at a friend's house, I just think to myself, why not BAYURVIDA® dumplings [...]." He's barely set a goal before he starts working on its implementation. And what Sascha calls the "first test" is, for us "tasters," delicious heaven on earth.
Sascha wouldn't be Sascha if he didn't try out a lot more. He's currently working on BAYURVIDA® recipes specifically designed for the Thermomix. Examples include sweet and spicy tomato soup and potato soup.
He and Andreas Hollard are in regular contact, and joint projects are not uncommon. During yoga retreat weekends at the Hotel Staudacherhof, Sascha and Andreas work together in the kitchen, delighting guests with a first-class six-course menu, while Christine Hollard creates balance between mind and body with special yoga practices in the spa area during the day.
We are the only hotel and restaurant in the Garmisch-Partenkirchen area that is permitted to offer BAYURVIDA® cuisine and we look forward to delighting you with our exceptional delicacies.
